Raw Food VS Cooked Food

I am excited to tell you that I spent the last day and a half at a David Wolfe seminar in Baltimore, Md.  David Wolfe is a raw foodist and he is a wealth of information.  Like any other 'life style' this is not for everyone.   But there are many things that each of us can take away from the raw food movement that would benefit us greatly.
For starters I think almost everyone can benefit from adding more raw food to your plates.  Salads are the obvious choice here because they are so easy to make, rinse and chop and you are done. Please  try to keep off the bottled dressings and bagged lettuce.  Stick to what is simple, pure and easy like delicious olive oil and fresh lemon juice or rice wine vinegar for a simply delicious dressing,  you can just drizzle it on your salad or get fancy and mix it up with some sea salt, garlic and fresh herbs.  If you really want to jazz up your dressing add some ripe avocado for a creamy dressing without dairy.  You will be surprised at how creamy and rich this makes your salad dressing. The taste will amaze you.

No when you go to the store, don't get overwhelmed when you get in the produce isle,  here are a few ideas to help you get going.  Start with familiar ingredients, romaine lettuce, cucumber, summer squashes, carrots or whatever you like best. Try adding some nuts or seeds for crunch.  Then look around for something new or different.  Something you might not usually buy like Jicama, a delicious root vegetable that looks like a funny potato, but tastes cool, crisp and sweet.  If you are not sure about a fruit or veggie, just ask the produce manager what it is, where it comes from and how to prepare it.  I encourage you to start adding greens and cruciferous vegetables to you meals EVERYDAY!  Yes, I said GREEN, poor Kermit he knew the difficulty of being green, green veggies get a bad rap but they can really taste great.   Green vegetables are really not so scary and can be used in so many ways, they are packed with vitamins, minerals ( including calcium) and also what is vital, FIBER.  Real fiber comes from your food, not a jar.  If you have not been eating raw salads you may need to lightly cook your greens to let your body get used to them.  Everyone is different and must start at their own level.
