Monday is the day I wonder what I will make for dinner. I don't know why, but that is just the way it is. I leave work saying," I am NOT cooking dinner tonight."
I look for inspiration on the way home, but the only vegetarian restaurant around is closed on Monday, and as for the other contenders like Dunkin' Donuts, well I am here to say this girl 'is NOT run-in' on dunkin!'
So, today was a typical Monday, and again I say, " I am not cookin' dinner tonight."When I get home I see the beautiful tomatoes and edamamme beans I picked at the farm yesterday.

So what was I worried about? Summer is here and the choices are OBVIOUS!

I put up a pot of water to cook some brown rice pasta and got to work on the rest.
I started by chopping 4 garlic cloves and 1/2 of a red onion and simmered that on a low flame
in some delicious olive oil.
Next come three cups of tomatoes, gently simmered with fresh oregano and then the Swiss Chard, chop about 12 leaves and layer over the tomatoes, cover and let it steam for a few minutes until it just starts to wilt. Stir in pan and add salt and pepper to taste, cook a few more minutes.
Rinse the pasta with cool water and while it is still in the colander drizzle with olive oil and 1/4 cup fresh chopped parsley and basil.
Plate the pasta or put it in a bowl spoon on the sauce, add some
red hot peppers, grated cheese or black olives if you like and that was it, dinner ready!

Then time to enjoy!
Look around and enjoy your summer inspirations, peppers, fresh beans,
eggplant, summer squash and more. All of this great fresh produce cooks
quickly and can even be thrown raw into a salad.
As for dessert, fresh watermelon and berries are plentiful, what more can you ask for.
Be decadent and dip the strawberries in chocolate, this is really delicious, I never
met a person who turned down a chocolate covered strawberry.
